Game
Day Chili
Our nephew, Dr. Dave Riley
and his wife, Rhonda,
serve this dish quite
often on game days or game
nights, as they have three
active boys. If they are
anything like their dad
when he was a young boy
there will be many games
to attend!
2 lbs. ground chuck
4 garlic cloves minced
1 onion
2 cans pinto beans, rinsed
and drained
3 (8 oz.) cans tomato
sauce
1 (12 oz.) bottle dark
beer
1 (14 ½ oz.) can beef
broth
1 (6 oz.) can chopped
green chilies
2 T. chili powder
1 T. Worcestershire sauce
2 t. ground cumin
1-2 t. ground red pepper
1 t. paprika
1 t. hot sauce
Cook first 3 ingredients
over medium heat, stirring
until meat crumbles.
Combine meat mixture,
beans and next 11
ingredients and bring to a
boil. Simmer 3 hours.
